Chef Sophie, from France to Allentown
Sophie Vandecasteele was born and raised in France, worked as a chemist, and earned a diploma in pastry arts before moving to the Lehigh Valley.
She started with pop-ups at Jay's Local and the local farmers' markets, opened Sophistiqué on Walnut Street in November 2024, and has since moved a couple of blocks to a bigger home at 960 Hamilton Street, with a separate kitchen, coffee drinks and tables to sit and stay.
“When you come in, you can really smell it and you know it’s all from that day.”Chef Sophie, to Edible Lehigh Valley
What Allentown is saying
“The best pastries around!!! My weeks are made much better when I can have a Sophistiqué croissant. My favorite is the pistachio berry croissant, and my husband loves the pain au chocolat.”
“We had a take out gift from this lovely bakery. Wow!! So yum. Flaky delicious, croissants in plain, chocolate almond, and chocolate were sampled. I cannot wait to go for more.”
